Marmee’s Favorite Soup Recipes
Nothing cures a chill on a cold winter's day like a warm bowl of homemade soup! 

This is one of my most favorite comforting homemade soups. I can remember it from way back in my childhood and the recipe is from my Momsy.  I call it “washday” chowder as back in the day it took so long to do the laundry over the washtub they didn’t have much time to spend on meal prep. This is quick and easy and delicious! I serve it with my homemade bran muffins.

Wash Day Chowder

RECIPE:

In a dutch oven or large stockpot fry up ¼ lb. bacon, crispy and snip into small pieces while frying. I use kitchen scissors to make it easy-peasy. Add in:

1 onion, chopped fine and saute with the bacon drippings and bacon pieces until the onion is translucent and soft.

 Peel 2 large potatoes and dice. Add into the bacon mixture along with 1 can (15 oz.) of whole kernel corn with juice and 1 can of diced tomatoes. 

Sprinkle with seasonings: 1 Tbsp. sugar, 2 tsp. sea salt, ¼ tsp. Black ground pepper, ½ tsp. paprika. Add in 3 cups boiling water.

Cook slowly for 25 minutes. Remove from heat and slowly stir in 1 cup heavy cream. (For dairy-free diets substitute 1 cup unsweetened plant-based milk.)

 

One more favorite I have made over and over for my family through the years called Cheeseburger Soup. Serve with a big green salad and slabs of homemade bread and butter...yum!

Cheeseburger Soup
RECIPE: 
In a large stockpot brown ½ lb. ground beef, venison, or turkey. Drain off any excess grease and add in:
4 Tbsp. butter
¾ cup chopped onion
¾ cup grated carrot
¾ cup diced celery
Saute a few minutes on med-high heat until softened. Add in seasonings:
1 tsp. Dried basil 
1 tsp. Dried parsley
¾ tsp. Salt
½ tsp. Ground black pepper
Stir and cook momentarily over med-heat.
Sprinkle in over the mixture and stir until flour is dispersed and coats the mixture:
¼ cup whole wheat flour or plain unbleached flour
Add in:
4 cups diced potatoes
3 cups chicken broth
Allow to simmer about 25 minutes until potatoes are soft.
Add in:
2 cups Cheddar cheese cubes
1 ½ cups whole milk
¼ cup sour cream
Stir until warmed through but do not bring to a boil.
Serve hot with crusty thick slices of French Bread.
