Homemade Baking Mix

This easy to make homemade baking mix is so convenient to have on hand.
You can use it anywhere in a recipe where it would call for a boxed commercial mix ("Bisquick" is an example of a brand name) I love to make this up as I
use organic non-hydrogenated palm shortening and unbleached flour, aluminum-free baking powder...you get the idea! You control the ingredients.

Ingredients:
1 1/2 tsp. sea salt
10 cups unbleached all-purpose flour
1 1/2 tsp. cream of tartar
6 Tbsp. baking powder, aluminum free
1/4 cup cane sugar
2 cups vegetable shortening
2 cups dry milk powder
Place in mixer bowl equipped with wire whisks: salt, flour, cream of tartar, baking powder and sugar. Whisk together until combined, then add the vegetable shortening.
Turn on mixer just briefly to make shortening into coarse crumbs. (pea size) Mix on "momentary" speed off and on again until this is achieved. If over-mixed the entire mixture will turn into a large ball of dough!
Whisk in the dry milk powder, and store in a covered container at room temperature.
Note: 3 cups of the unbleached flour can be replaced with freshly milled pastry wheat flour. If you use this substitution, you must store your mix in the refrigerator to keep optimum freshness.
